Description
Suli-guli (also known as Sulguni) is a traditional Georgian pasta filata cheese made from a mix of cow, goat, and buffalo milk, with a fat content of around 45% in dry matter. This cheese has an elastic, semi-soft texture and is characteristically brined, imparting a mildly sour and moderately salty flavor. Originating from the Samegrelo and Svaneti regions of Georgia, Suli-guli is crafted by stretching curds in hot water, kneading, and shaping into rounds before aging in brine. It is a versatile cheese, enjoyed fresh or melted, and is a key ingredient in Georgian dishes like khachapuri. Made with natural ingredients and animal or microbial rennet, it is a vegetarian-friendly product when microbial rennet is used.
